As personal chef to Oprah Winfrey, Art Smith has cooked for some of the world’s most famous celebrities. He is also executive chef and co-owner of one of Chicago’s hottest restaurants, Table fifty-two. A native of Jasper, Florida, Smith is the former executive chef of the Florida Governor’s Mansion during the tenure of Bob Graham. A graduate of the prestigious Walt Disney Magic Kingdom College culinary program, Smith was also chosen for, and completed, two highly selective internships at The Greenbrier Resort. In 1997, Smith became the personal, day-to-day chef to Oprah Winfrey, a position that lasted ten years. Smith now coordinates and cooks for the headline-grabbing special events that Ms. Winfrey hosts. A contributing editor to O, the Oprah Magazine, Smith is also author of three award-winning cookbooks: Back to the Table; Kitchen Life: Real Food for Real Families; and Back to the Family. Smith has made regular television appearances on programs such as Iron Chef America, The Today Show and Oprah in addition to having served as a Williams-Sonoma culinary instructor and the special events chef for Martha Stewart Living magazine. Smith’s cooking and writing talents have earned him highest praise, but perhaps his greatest gift to the community at large has been his philanthropy. In 2003 he founded Common Threads, a non-profit organization that teaches children about diversity and tolerance through the world’s great cultures. For his tireless Common Threads leadership, Smith was honored by Chicago magazine as a “Chicagoan of the Year” in 2007. That same year, the prestigious James Beard Foundation named him “Humanitarian of the Year.” In the fall of 2008 Chef Art Smith will be opening his second restaurant, Art and Soul in Washington DC. Smith lives in Chicago with his life partner, renowned artist Jesus Salgueiro, and their three dogs, five cats and fifteen fish.

June

June 12 - 14, 2009 : Sean Brock Culinary Weekend
Known for pushing the envelope of contemporary cuisine with imaginative creations such as Country Ham Cotton Candy, Chef Sean Brock was nominated in 2008 for James Beard Award “Rising Star Chef.” As executive chef of McCrady’s in Charleston, South Carolina, Brock has garnered continuous praise and McCrady’s has been ranked as one of the top 10 restaurants in all of North America by Opinion About Dining (OAD). After graduation from Johnson & Wales, Chef Brock began his career as Chef Torment at the Peninsula Grill in Charleston, SC. After two years, he earned the position of Executive Sous Chef of Lemaitre Restaurant at the Jefferson Hotel in Richmond, VA. His success in Richmond led to his promotion to Executive Chef at the Hermitage Hotel in Nashville, TN. Chef Brock spent just under three years fine-tuning his craft in Nashville before accepting a position as Executive Chef at McCrady’s Restaurant in Charleston, SC. Shortly after his return to Charleston, Chef Brock began the development of a 2.5 acre farm on Wadmalaw Island. Rather than rely on others to fulfill the voluminous needs of the kitchen and the demands of an increasingly sophisticated food community, he wanted to create a true field-to-table experience. The entire McCrady’s team works the farm together to produce 90% of the vegetables for the restaurant. The personal relationship to the food grown on the farm serves as inspiration for everyone working at McCrady’s. “When you push a carrot seed into the ground and stare at it for sixty days waiting for it to grow, you look at that carrot differently when it finally makes its way into the kitchen and onto someone’s table,” said Brock. Sean is married to his high school sweetheart, Tonya, and they are currently raising 10 pigs on Wadmalaw Island.

September

September 18 - 20, 2009 : Lee Richardson Culinary Weekend
Little Rock’s Lee Richardson is one of the most exciting new chefs in the South. Gathering artisan farmers and growers to create a “new Arkansas” foodways movement, Lee’s culinary star is rising and epicureans are flocking to his Little Rock restaurant. Born and raised in New Orleans, his birthday celebrations were always centered around two questions. From his paternal grandmother, “What would you like me to prepare for your birthday dinner?” It was at her table that celebration and a sense of family became rooted. The second came from his maternal grandmother, “Where would you like to go to dinner for your birthday?” It was this second question that exposed Lee to the finest restaurants in a city that was world renowned for its food and all around focus on having a good time. And it was just that, having a good time that brought Lee to the realization that food was his passion. Lee began to aggressively pursue one of New Orleans most renowned chefs, Emeril Lagasse, and eventually got a job at Emeril’s restaurant NOLA. After several years of working with some of New Orleans finest chefs, Lee landed a job and training with his most important professional influencer, John Besh of Restaurant August. Hurricane Katrina hit several years later and reorganized the lives of everyone living there. It was then Besh led Lee to interview with Stephens Inc. and Fred Carl, founder of Viking Range Corporation, for a position as Chef for the luxurious Capital Hotel in Little Rock, Arkansas. As Capital Hotel’s Executive Chef and the personality behind Ashley’s Restaurant, Lee Richardson has directed the design of the hotel’s five kitchens to create a state-of-the-art private event venue, and two restaurants dedicated to hand-crafted artisanship, seasonality and the celebration of the abundance of Arkansas’ natural resources. Lee lives in Little Rock with his wife Martha and their daughter Fiona.
